Noodle and chicken laksa recipe

Finding the perfect laksa recipe can be tough, so we’ve done all the hard work for you! This delicious and nutritious chicken laksa is packed full of flavour and some of our favourite ingredients.

Ingredients

  • Olive oil spray
  • 45g rice vermicelli noodles
  • ¼ onion
  • ¾ tbsp red curry paste
  • 80g chicken breast
  • 3 tbsp coconut milk
  • 1 tsp ginger
  • 125ml water
  • ½ carrot
  • 80g bok choy
  • 40g snow peas
  • 125ml chicken stock

Method

  1. Cook the vermicelli noodles as per packet instructions. Drain well and set aside.
  2. Finely chop onion and ginger, peel and slice carrots, trim and halve snow peas, trim bok choy. Cut chicken into thin strips.
  3. Spray a non-stick saucepan with olive oil and heat over medium heat. Add onion and stir fry until golden. Add the curry paste and continue to stir fry for a further 1-2 minutes. Add the chicken and stir fry for 2-3 minutes or until the chicken begins to brown.
  4. Add the chicken stock, coconut milk, grated ginger and water to the saucepan and stir well. Bring to the boil on a high heat and then add the carrot. Reduce the heat to low and simmer for about 5 minutes or until the chicken is cooked through. Add the bok choy and snow peas and cook for a further minute. Remove from heat.
  5. Add the noodles to the saucepan and mix well to combine. Place the laksa in a bowl. Serve and enjoy!
